Beans and Wieners under Cornbread
2 (12 ounce) package all-beef wieners
4 (16 ounce) cans vegetarian beans
1/4 cup catsup
2 tablespoons Dijon-style mustard
2 tablespoons dark brown sugar
2 tablespoons dark molasses
2 teaspoons hot-pepper sauce
2 scallions, including part of the green, chopped
2 tablespoons olive oil
1 1/3 cups yellow cornmeal
2/3 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
Preheat oven to 350 degrees F.
Brown wieners in skillet. Cut diagonally into 1-inch pieces. Mix beans, catsup, mustard, sugar, molasses and pepper sauce in 13 x 9-inch baking dish. Stir in wieners. (This much can be fixed ahead and refrigerated.)
Meanwhile, saut? green onion in oil until soft. Set aside.
Whisk cornmeal, flour, sugar, baking powder and salt in a bowl. Stir in green onion with oil.
Mix eggs and milk in small bowl. Stir into flour mixture until smooth and spoon over casserole. Bake for 30 minutes or until golden brown. Let cool 10 to 15 minutes before serving.

Corned Beef Casserole
2 cups corned beef, cooked and shredded, or 1 can corned beef
1 cup sharp Cheddar cheese, shredded
1 (10 ounce) can condensed cream of celery soup
1 cup milk
1/2 cup sour cream
1 small onion, minced
2 cloves garlic, crushed
1/4 teaspoon freshly cracked pepper
1 (8 ounce) package egg noodles, cooked and drained
Combine all ingredients in a 2-quart baking dish. Mix well. Bake at 350 degrees F for 30 to 40 minutes.
Serves 6

West of the Pecos Casserole
1/2 cup (1 stick) butter
2 pounds lean ground beef
1 large onion, chopped
1 green bell pepper, chopped
1 (6 ounce) can sliced mushrooms
2 teaspoons chili powder (or more)
1/4 cup Worcestershire sauce
Salt and pepper, to taste
1 can tomato soup
1 (1 pound) can cream-style corn
1 (1 pound) can tomatoes and green chiles
1 (12 ounce) package noodles, cooked and drained very well
Melt butter in a heavy skillet or kettle. Add meat, onion, pepper, mushrooms, chili powder, Worcestershire sauce, salt and pepper; cook until meat is brown. Add soup, corn and tomatoes; simmer 30 minutes.
Add cooked noodles. Pour into large casserole and let cool. Bake 1 hour at 325 degrees F. Serves 12.
A topping of grated Monterey Jack or Cheddar cheese makes this dish special. This can be made a day or two ahead.

Rice Krispies Casserole

1 medium onion, chopped
1 can chicken and rice soup
1 can cream of chicken soup
3 cups Rice Krispies
Mix all ingredients together. Place in casserole dish and bake uncovered for 30 minutes at 350 degrees.

Jerome Funeral Recipe
Jerome is a ghost town which clings to the side of Cleopatra Hill on Mingus Mountain near Cottonwood, Arizona. It is the home of the Douglas Mining Museum.
1 (28 ounce) can pork and beans
1 (12 ounce) can corned beef
1 large onion, diced fine
1 bell pepper, diced fine
Mix all ingredients. Put into a 13 x 9-inch baking dish and heat for 25 to 35 minutes at 350 degrees F.
Serves 8 to 10.

Johnny Marzetti Casserole
2 pounds ground beef
2 cups chopped celery
2 cups chopped onion
1 cup chopped green pepper
1 (16 ounce) package wide flat noodles
Saut? ground beef, celery, onion and green pepper together. Cook noodles as directed. Mix meat and noodles and add:
1 (10 ounce) jar salad olives (broken pieces), juice and all
1 small can tomato paste
1 can tomato soup
1 (8 ounce) can tomato sauce
1 package spaghetti sauce mix, mixed as directed on package
1 (4 ounce) can mushroom pieces and stems
Mix all together and turn into lightly greased pan. Cover with one pound grated Cheddar cheese. Bake uncovered at 375 degrees F for 30 minutes.

Taco Potato Casserole
1 bag frozen hash brown potatoes
1 pound ground beef or ground turkey
1 envelope taco seasoning mix
1 can diced chile peppers
2 cups grated Cheddar cheese, divided
Brown ground beef and drain. Add taco seasoning and follow directions on the package for taco meat. Spray a casserole dish.
Mix together meat mixture, chile peppers, hash browns and 1 cup of cheese and put into casserole. Top with remaining Cheddar cheese. Bake at 350 degrees for 45 minutes or until hash browns are cooked.

Creamy Spaghetti Casserole
1 1/2 pounds ground beef
1 tablespoon butter
2 (8 ounce) cans tomato sauce
Salt and pepper to taste
1/2 pound cottage cheese
8 ounces cream cheese
1/4 cup sour cream
1/3 cup chopped scallions
1 tablespoon green bell pepper, chopped
1 (7 ounce) package spaghetti, cooked
2 tablespoons butter, melted
Brown beef in butter. Add tomato sauce, salt and pepper. Remove from heat.
In separate bowl, combine cottage cheese, cream cheese, sour cream, onions and green pepper.
In 2-quart casserole spread half of spaghetti; cover with cheese mixture. Add remaining spaghetti and pour melted butter on top. Spread meat sauce over top. Chill.
Remove from refrigerator 20 minutes before baking. Bake at 350 degrees F for 45 minutes. Can be made the day before.
Servings: 8 to 10

Stuffed Pumpkin
Try this. The presentation is beautiful!
1 small whole pumpkin, about 10 inches in diameter
Boiling salted water
2 tablespoons vegetable oil
2 pounds ground beef
1 large onion, finely chopped
1 medium green pepper, finely chopped
2 teaspoons salt
1 teaspoon oregano
1 teaspoon vinegar
Freshly-ground pepper, to taste
2 cloves garlic, mashed
3/4 cup seedless raisins
1/3 cup sliced pimento-stuffed green olives
2 teaspoons capers
1 (8 ounce) can tomato sauce
1/2 cup red wine
3 eggs, beaten
Preheat oven to 350 degrees F.
With a sharp knife, cut a circular top about 5 inches in diameter out of the pumpkin. Save the top to use as a lid. Scoop out pumpkin seeds and scrape inside of pumpkin clean. Place it in a large kettle and cover with boiling salted water; cover kettle. Bring water to a boil, lower heat and simmer for about 10 minutes until pumpkin meat is almost tender. The pumpkin should still be firm enough to hold its shape well.
Carefully remove from water and drain well. Dry the outside and sprinkle a little salt on the inside. Set aside.
In a heavy skillet with a cover heat oil. Add ground beef, onion and green pepper. Cook over medium high heat until beef is browned and crumbly. Remove from hat and add salt, oregano, vinegar, pepper and garlic. Stir in raisins, olives and capers, then gradually add tomato sauce and red wine. Cover skillet, return to heat and simmer for about 15 minutes, stirring occasionally. Cool slightly and add beaten eggs, mixing thoroughly. Fill cooked pumpkin with meat stuffing, pressing to pack firmly. Cover loosely with pumpkin lid and place in a greased shallow baking pan. Bake for 1 hour. Allow to cool for 10 to 15 minutes before serving.
To serve, carefully lift stuffed pumpkin onto a serving plate. Slice from top to bottom in flat wedges, spooning more meat filling onto each slice.
